Springtime Celery Root and Apple Salad
One of our Saturday market customers, Robbie Shaw, was nice enough to pass along this recipe for Celery Root and Apple salad. The combination of flavors together sound wonderful and light, and it is rich in Vitamins A, B6, C, K, and E, along with being high in potassium and fiber.

Springtime Celery Root and Apple Salad
Salad Ingredients
1 Celery Root peeled & julienned
1 Large (or 2 medium) Crisp Organic Apple julienned
2/3 cup toasted pistachios or pecans
1 tsp finely minced fresh parsley
Blue Cheese crumbled
Vinagrette Dressing
1 tsp Dijon mustard
1/4 cup light Extra Virgin Olive Oil
2 tbsp rice or champagne vinegar
1 tbsp fresh lemon juice
1/2 tsp sea salt
1/2 tsp small garlic clove minced
1 tsp pure maple syrup
Blend dressing ingredients together and shake until mixed well.
Wash and peel celery root. Peel and core apple. Use a mandolin to make thin match sticks or julienne by hand the celery root and apple. Mince parsley. Toast the nuts. Toss all these ingredients together. Then drizzle dressing over top and toss well. Fold in blue cheese crumbles to taste.
