Asparagus season…
It is that time of year… Asparagus season in the desert runs from the end of January until about Easter depending on the weather, and right now they are being harvested daily.
Asparagus is a multi-year crop that will last 20 to 30 years if it is taken care of properly. We harvest them as tips that run 6 to 7 inches long. They only need to be freshened up at the cut end by cutting 1/4 inch off just prior to washing. This practice insures that they don’t get fibrous from letting them get too tall. They turn a dark green when steamed or sautéed and are tender right down to the cut end.
